Duck with Anchovies

这个是在单位食堂吃到的,觉得很好吃。就去管大厨们要菜谱。大厨给我的菜谱居然是手写的,而且分量是一只鸭子的。太出乎意料了。我以为还不得是二三百人份的。做好了充分的准备要把所有的分量都除个大数儿的。

好吃。非常好吃。菜谱不能写在这里。主要佐料是anchovies。大厨说最好是spanish anchovies, which are preserved in vinegar, instead of italian ones which are stored in olive oil。我把whole food整排的anchovies都看了一遍,好像每个都是in olive oil的啊。另外的佐料是thyme和majorcam, 我听都没听说过。据说又名wild oregano. 这两个香料味道很冲,其实可以酌量少加一点儿。
