我在试验各种organic vege的service。有一次的菜箱里面来了swiss chard, 不带红色的那种。查了好几个地方,还向别人打听,总之老外说这个东西炒着吃,老中说蒸更好吃 我也不知道谁对,后来突然发现人家用来绑这个chard的绳子上面明明有个菜谱,这下全解决了。我很喜欢这些吃的东西的包装上面的菜谱,觉得都是人民群众长期实践的积累,非常靠得住,不会难吃的
实践之后果然很好吃。一下子爱上了swiss chard 不 过总的来说呢,这个东东fiber很长,也比较粗,所以绝对不是很嫩的那种蔬菜。但是另有一种清香,和西红柿等搭配在一起味道很好。我最近做的都是绿色 的,不带红色的那种swiss chard, 改天要买那个带着红色的来试试,看看有没有大的分别。thomas kellar有一个红色chard和leek一起炒的方子,我要试试。觉得chard给我开了一扇新的门,就是两样蔬菜互炒。以前没有意识到这个组合,虽 然自己也做,比方说韭菜炒豆芽,胡萝卜炒豆芽等,还有就是多用真菌类炒蔬菜,或者几样蔬菜凉拌,但是从来没有conciously的 exhaustively的尝试过蔬菜互炒。这下仿佛发现了一个新天地。不知道是喜还是忧,哈哈。
后面放两个chard的菜谱,很类似。前一个是卖菜的给的,后一个是joy of cooking上的。除了一个用牛奶,一个用heavy cream外,几乎没有什么区别。从实际操作上看,我觉得放牛奶的更可口一些。或者中式炒法,不加任何奶制品,也很好吃。chard炒起来,时间上可以稍 微长一点,但是久了会变紫,就没呢么上相了。
卖菜的给的菜谱:
(Lakeside Organic Gardens, watsonville, CA 95076)
Swiss Chard and Creamy Pasta
1 lb. Swiss Chard
1 tbsp. olive oil
2 cloves garlic (chop)
1/4 c. chopped onion
1/2 c. sour cream or plain yogurt
1/2 c. lowfat milk
1/4 c. parmesan cheese
8 oz. fettucine, cooked according to pkg.
1/8 tsp. pepper
1/8 tsp. salt
Wash Swiss Chard, cut into small pieces. Heat oil in large 2-quart saucepan over medium-high heat, 1-2 minutes. Add Swiss Chard, garlic and onion; cooking 1-2 minutes, stirring occasionally. Andd tomatoes, sour cream, milk, parmesan cheese, cooked fettucine, pepper and salt. Stir well. Serve warm. Makes 4 servings.
下面这个是joy of cooking (2006 version) 上的。
CREAMY PASTA WITH CHARD AND TOMATOES
4 first-course or side-dish servings
Please read About Cooking Pasta, 320. Heat in a large saucepan over medium-high heat:
1 tablespoon olive oil
Add and cook, stirring occasionally, until soft and golden, 2 to 3 minutes:
1/4 cup chopped onion
2 garlic cloves, minced
1/4 to 1/2 teaspoon crushed red pepper flakes
Add and cook, stirring occasionally, until most of the liquid is evaporated, about 5 minutes:
2 large ripe tomatoes, peeled, 311, and chopped, or 1 cup chopped drained canned tomatoes
Add and cook, stirring, until the chard has wilted, about 2 minutes.
1 pound chard, trimmed and cut crosswise into 1/2-inch strips
Add:
3/4 cup heavy cream
salt and black pepper to taste
Cook 2 minutes, or until bubbling. Remove from the heat. Meanwhile, cook in a large pot of boiling salted water
8 ounces fresh or dried fettuccine or egg noodles
Drain the pasta, add to the sauce, and toss well to coat.
Add and toss in:
3/4 cup grated Parmesan (3 ounces)
